Vegan Broccoli Almond Soup


  • 2 cups broccoli florets
  • 1/4 cup almond butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth/water
  • 1 cup almond milk (or any other plant-based milk)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: sliced almonds, chopped fresh herbs (such as parsley or any greens)

Recipe Preparation

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent.
  • Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.
  • Add the broccoli florets to the pot and sauté for another 3-4 minutes, until they start to soften.
  • Pour in the vegetable broth, then bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 10-15 minutes, until the broccoli is tender.
  • Carefully transfer the soup mixture to a blender. Add the almond butter and almond milk to the blender as well.
  • Blend the mixture until smooth and creamy. You might need to do this in batches if your blender isn't large enough.
  • Pour the blended soup back into the pot and reheat over low-medium heat. Season with salt and pepper to taste.
  • Once the soup is heated through, ladle it into serving bowls.
  • Optionally, garnish each bowl with sliced almonds and chopped fresh herbs.
