Roasted Red Pepper Hummus

Delicious and healthy dip / serve with baked Falafal or vegetable sticks.


  • 425 Gms chickpeas (Steamed & drained)
  • 1 large roasted red pepper, peeled and seeded
  • ¼ cup tahini (sesame seed paste)
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Recipe Preparation

  • In a food processor or blender, combine the chickpeas, roasted red pepper, tahini, minced garlic, lemon juice, extra virgin olive oil, cumin, paprika, salt, and pepper.
  • Blend the mixture until smooth and creamy. If the mixture is too thick, you can add a tablespoon or two of water to thin it out.
  • Taste the hummus and adjust the seasonings according to your preference. You can add more lemon juice, garlic, or spices as desired.
  • Transfer the hummus to a serving bowl.
  • Drizzle a little extra virgin olive oil over the top and garnish with chopped fresh parsley.
  • Serve with pita bread, fresh vegetables, or your favourite dippers.
