Man chow Vegetable Soupy Noodles

Ingredients

  • 1/4 cup finely chopped mixed vegetables (carrots, beans, cabbage, bell peppers, etc.)
  • 2 tablespoons finely chopped onion
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon finely chopped ginger
  • 2 green chilies, finely chopped (adjust to taste)
  • 1/4 cup finely chopped spring onions (white and green parts separated)
  • 1/4 cup cooked and finely chopped mushrooms (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar (white or apple cider)
  • 1 tablespoon chili sauce or hot sauce (adjust to taste)
  • 1 tablespoon tomato ketchup
  • 1/4 teaspoon black pepper powder
  • Salt to taste
  • 2 tablespoons oil (vegetable or sesame oil)
  • 6-7 cups vegetable broth (or water)
  • 2 tablespoons cornstarch mixed with 3 tablespoons water (cornstarch slurry)

For the Garnish

  • Steamedrice noodles
  • Chopped spring onion greens
  • Chopped fresh cilantro (coriander leaves)
  • Sliced green chilies

Recipe Preparation

  • Heat oil in a large soup pot over medium heat. Add chopped garlic, ginger, green chilies, and white parts of spring onions. Sauté for a minute until fragrant.
  • Add the chopped onions and sauté until they turn translucent.
  • Add the finely chopped mixed vegetables and mushrooms (if using). Stir-fry for a few minutes until they start to soften.
  • Pour in the soy sauce, vinegar, chili sauce, and tomato ketchup. Mix well to coat the vegetables.
  • Add the vegetable broth (or water) and bring the soup to a boil. Reduce the heat to a simmer and let the soup cook for about 10-15 minutes, allowing the flavors to meld.
  • Season the soup with black pepper and salt to taste.
  • Prepare the cornstarch slurry by mixing cornstarch and water. Gradually pour the slurry into the soup while stirring continuously. This will help thicken the soup slightly.
  • Increase the heat to medium and let the soup simmer for another 2-3 minutes, stirring occasionally, until it reaches your desired consistency.
  • Add the finely chopped spring onion greens and give it a final stir.
  • Have hot Man chow Vegetable Soup into serving bowls. Garnish with Steamed rice noodles. Add cilantro, and sliced green chilies.
